Seville Orange Marmalade Cake
Makes one 9in single layer cake.
Ingredients
175g butter softened
175g castor sugar
3 large free range eggs beaten
175g self raising flour
1/2 tsp baking powder
3 Tblsp chunky Seville Orange Marmalade
2 Tblsp milk
Icing:
3 Tblsp Seville Orange Marmalade
100g icing sugar sifted
2 Tblsp hot water
Preheat oven to 180*C / 350*F Gas 4. Grease and line the tin. Cream the butter then beat in sugar gradually. Continue to beat until pale and fluffy. Add beaten eggs in small batches, beating well after each addition. Add a Tblsp of flour with last batch of beaten egg. Sift remaining flour and baking powder, gently fold into mixture with a metal spoon. When thoroughly combined stir in the marmalade and milk. Spoon into prepared tin and bake for 50-55 mins or until firm to touch. Turn out onto wire rack, then turn right side up. Warm marmalade and brush it over the cake top. Allow to cool completely. Make the icing and spoon over the cake. Allow to drizzle down sides, then. Leave to set before serving.
