Icing your Christmas Cake

Fondant icing is widely available for rolling out to fit your cake. Icing the top only is fine, and the sides of the cake can be covered with ribbon.

For those who would prefer to make their own here is a recipe for Royal Icing


  • 450g icing sugar
  • 2 egg whites
  • 2 teaspoons of lemon juice strained


  • Whisk egg whites until they begin to froth.
  • Start addingthe sieved icing sugar by the spoonful, beat well between additions.
  • Add the lemon juice and if you would prefer a softer icing add a few drops of glycerine at this stage.
  • Beat well until icing reaches stiff peaks, cover the bowl with a damp cloth and leave for a short time before starting to ice your cake.
