- Use the best quality ingredients you can find.
- We recommend using butter and free range eggs for our recipes to get the best flavour.
- Eggs should be at room temperature before using.
- Read the recipe carefully, and make sure you have all the ingredients.There may be additional preparation for some ingredients before adding to the final mix,e.g. grating, peeling, dicing,
- Have all ingredients ready in the amounts required before you start.
- Preheat the oven, this can easily be overlooked. Check that you have enough gas if using, as cakes or puddings, depending on size, can take several hours.
- Christmas cakes-Line the tin both inside and out to protect your cake from getting too well done on the outside. This could cause the fruit to have a bitter taste.
- Christmas puddings- To avoid water getting into your pudding while steaming, make sure the pudding bowl is well protected by wrapping in both greaseproof paper and tinfoil.
