Almond Paste Recipe


  • 225g ground almonds
  • 225g caster sugar
  • 1 small eggs
  • 1/2 teasp lemon juice
  • 1 Tablespoons whiskey
  • A drop of almond essence


Sieve the sugar and mix with ground almonds.
Beat the egg, add whiskey, lemon juice and the almond essence.
Add to dry ingredients and mix to a stiff paste.
Sprinkle the worktop with icing sugar and work the paste lightly until smooth.

To cover the cake:

You will need some lightly whisked egg white to paint the top of the cake as the paste needs to stick to it.

Lay a sheet of greaseproof paper out on the worktop, sprinkle with icing sugar.
Roll the almond paste out on this paper to a thickness of 1cm.
Brush the top of the cake with some of the egg white.

Put cake, egg white side down, on the rolled out almond paste and press down to ensure it adheres well.
Slide a palette knife underneath the greaseproof paper, turn cake right side up and peel off the paper.
